  • 3 oz. Cold butter
  • 1/4 cup Coldwater
  • ㅤMarinade The Tuna
  • tbsp. Orange juice
  • 4 tbsp. Extra virgin olive oil
  • 1/2 tbsp. Butter
  • 2 tbsp. Dill
  • 1/2 tsp. Salt
  • 1/4 tsp. Ground black pepper
  • 12 oz. Tuna
  • 1/2 large Lemon, juiced
  • 1/4 cup Arugula salad
  • ㅤGarnish
  • Dill

To prepare the shortcrust pastry, put the flour, the butter in cold pieces from the fridge, a pinch of salt in the mixer equipped with blades, and blend everything for a few seconds.

Then add the ice-cold water and knead the dough for another 1 minute until it is compacted. Transfer onto a flat surface.

Work it with your hands just for 30 seconds. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 40 minutes.

Onto a flat surface put the pastry in between 2 parchment paper sheets and stretch with a rolling pin. (NOTE, for this pastry it is not advised to use a pasta stretching machine.)

Cut discs that are approximately 1 inch in diameter larger than the Tartlette cups you are using.

Take the Tartlette cups/pan and spread butter on the inside surface with one side of a butter stick.

Lay the discs you have previously cut inside the Tartlette cups and press down gently with your fingers.

Bake in the oven at 350°F/176°C for 14 to 16 minutes.

In a bowl add orange juice, virgin olive oil, chopped fresh dill, salt, and black pepper to taste, mix well with a fork or a whisk.

Put the diced tuna in the marinade bowl and let sit for 15 minutes to 1-hour maximum.

After baking the tartlets for 10 minutes add the lemon juice to the tuna mix and mix well. Marinade for 5 more min.

Add Arugula and mix well.

After cooking, let cool your Tartlettes for 15 minutes and fill them with the tuna.
