Cauliflower Rice Stir-Fry

Loaded with lots of veggies, this quick and easy Cauliflower Rice Stir Fry tastes better than take-out, with half the carbs! It is colorful, crunchy and loaded with a tasty peanut-Asian sauce.

Ingredients:
  • 500 g Cauliflower
  • 0.5 cup Carrot
  • 1 tsp. Minced Ginger
  • 1 tbsp. Chili
  • 0.5 cup Snow peas
  • 0.5 cup Yellow bell pepper
  • 0.5 cup Red bell pepper
  • 0.3 cup Green soybeans
  • 0.3 cup Cashew
  • 2 tbsp. Peanut butter
  • 0.3 cup Water
  • 0.25 cup Soy sauce
  • 2 tbsp. Sesame oil
  • 1 tbsp. Olive oil
  • 1 pinch Salt
  • 1 pinch Pepper

Clean the cauliflower. Grate it well and set aside.

Warm a large skillet with medium-high heat, add olive oil, grated cauliflower. Stir-fry well, transfer to a large bowl and set aside.

In the same skillet, heat up with medium-high heat, add olive oil, minced ginger, chopped chili, shred carrot, shred bell peppers, snow peas and green soybeans. Seasoning with salt and pepper. Stir-fry well, transfer to the same bowl with cooked cauliflower.

Meanwhile, in a small bowl, whisk in peanut butter, water, soy sauce and sesame oil. Mix well. Pour the mixture into the fry veggies bowl. Mix it well.

Transfer to a plate, garnish with cashew and serve.
