Ingredients:
  • 1 Pound Boneless skinless chicken breasts
  • 1/2 Large Onion, peeled and chopped brunoise
  • 2 Cloves Garlic, minced
  • 1 tbsp. Olive oil
  • 1 cup Fresh green Pasilla peppers (or in alternative use similar green peppers such as Shishito peppers. We used Anaheim peppers)
  • 10 oz. Canned crushed tomatoes (or tomato sauce if preferred without chunks)
  • 2.5 qt. Chicken stock
  • 1/2 tbsp. Ground cumin
  • 1 tsp. Crushed red pepper
  • 1 Large Deseeded and chopped Jalapeno pepper
  • 1/3 tsp. Turmeric
  • 1.5 cup Sliced carrots
  • 2.5 cup Chopped cabbage
  • 2 cup Small broccoli florets
  • 1 Large Avocado peeled and diced (can use 2 if you like more Avocado)
  • Salt and pepper to taste
Directions:

Sprinkle salt and fresh ground pepper on both sides of the chicken breasts.

Set a large 6-8 quart pot over medium heat. Add the olive oil once the pot is hot and immediately sear chicken on both sides for 1 and half minutes.

Once the chicken is seared remove it from the pot and set aside.

Add chopped onions, garlic, and sauté for 5-6 minutes to soften.

Now add the seared chicken breast back in the pot and add the green peppers, crushed tomatoes, chicken broth, all the spices, carrots, and 1 teaspoon sea salt.

Bring to a boil, lower the heat, and simmer for 20+ minutes, until the chicken breasts are cooked through. Then remove the chicken with tongs and set them on a cutting board to cool.

Add the chopped cabbage and broccoli to the pot. Continue to simmer to soften the broccoli.

Meanwhile, shred the chicken breasts with two forks, and stir it back into the soup.

Once the broccoli is tender, taste, then salt and pepper as needed. Serve warm with a generous amount of diced avocado on top.
