Tuscan style Goat Ricotta and Spinach Gnudi

  • 7 oz. Butter
  • 1 sprig Sage
  • ㅤFor The Spinach Gnudi
  • 7 oz. Spinach
  • 1 tbsp. Olive Oil
  • 1/8 tsp. Salt
  • 1/8 tsp. Ground Black Pepper
  • 1 lb. Ricotta Cheese
  • 1/2 cup Grated Parmesan Cheese
  • 1 cup Flour
  • 1/2 tsp. Salt
  • 1/4 tsp. Ground Black Pepper
  • 1 large Egg
  • ㅤ ㅤ ㅤDry Coating
  • 1 cup Flour
  • ㅤ ㅤ ㅤ ㅤGarnish
  • 1 tbsp. Grated Parmesan Cheese
  • 3 Fresh Sage

Turn on the stove is very very low heat, Put the buttrt and sage in the pot, close the lid on.

Cook the spinach with oil in another panfor a few minutes, then put in a bowl.

Diced cooked spinach.

In a bowl mix all the ingredients well.

Start making quenelles or balls of the size of apricot with your hands.

Lay them on a sheet pan with parchment paper on.

Roll the quenelles or balls into the flour and lay back on the same sheet pan.

Put a pot half 3⁄4 full of water on high heat on the stove to get the water boil. When the water starts boiling, reduce the heat a little bit to keep the water gently boiling. Too hard boiling water will break the gnudi.

Drop gently the gnudi in the water one by one without overcrowding the pot and cook them for around 3 to 5 minutes or until they start floating up in the water.

Put spinach gnudi in a plate, and drizzle with sage sauce.

Garnish with fresh sage and grated parmesan cheese.
