Pumpkin Spice Latte will ensure an evening chill with a hot drink. It is light and creamy with coconut milk and almond butter will make the moment of relaxation even more pleasant. Pumpkin seeds provide a natural source of tryptophan, an amino acid that promotes sleep. Research shows that 1 gram of tryptophan daily improves sleep. Pumpkin seeds also contain both magnesium and zinc.

Ingredients:
  • 2.5 cup Pureed pumpkin
  • 1 tsp. Pumpkin spice plus extra for garnishing
  • 2 cup Unsweetened almond milk
  • 2 tsp. Almond butter
  • 2 tbsp. Maple syrup
  • 2 tsp. Maca powder
  • 1/2 cup Full-fat coconut milk
  • 2 oz. Pumpkin seeds
  • Optional: Non-dairy – non-fat whipped cream for topping

Transfer the coconut milk into a bowl removing first the more liquid part of the milk, and use a hand whisk to obtain a smooth cream.

Heat up gently over low-medium heat until hot to the touch but not boiling. Optionally top with non-dairy/non-fat whipped cream if desired, sprinkle with pumpkin spice.

Toast your pumpkin seeds to serve on the side. Optionally grind some of the toasted pumpkin seeds to put on top of your cream.
