No-Bake Lotus Cheesecake is a crunchy and buttery cookie crumb base, followed by a luxuriously creamy cheesecake cream. All topped with a fantastic creamy caramel and finally garnished with Lotus biscoff and crumbs. It is just not to be missed. Enjoy homemade with a cup of coffee.

Ingredients:
  • 2.1 Oz. Lotus biscoff
  • 0.7 Oz. Unsalted butter
  • 8.8 Oz. Cream cheese
  • 1.4 Oz. Sugar
  • 7 Oz. Whipping cream
  • 1.4 Oz. Plain yogurt
  • 0.2 Oz. Gelatin sheet
  • 1.4 Oz. Sugar
  • 0.35 Oz. Hot water
  • 1.7 Oz. Whipping cream
  • 0.35 Oz. Unsalted butter
  • 0.35 Oz. Lotus biscoff
Directions:

Crush Lotus into fine crumbs with a rolling pin. Add melted butter, mix combined.

Mix together the cream cheese, sugar, gelatin sheet, plain yogurt in a water bath.

Beat whipping cream until soft peak. Add to cream cheese mixture. Pour into the mousse mold. Refrigerate for at least 4 hours.

Prepare caramel sauce, add sugar, water to a medium pot, cook until the brown color, turn the heat down, add cream, butter.

Caramel sauce drip in the top, and put some lotus biscoff for toppings.
