Crumbed Calamari Fans with Tzatziki Salsa In Cucumber Cup

Delicately fried, crispy crumbed and perfectly textured, succulent, tender calamari fans. Serve as an appetizer partnered with handcrafted cucumber cups filled with tangy Tzatziki sauce. [Note: Alternatively, substitute Tomato Sauce or Cocktail Sauce according to personal taste.]

Ingredients:
  • 1 lb. Squid
  • Half Cucumber
  • Tartar Sauce
  • 2 tbsp. Greek Yoghurt
  • 1 tbsp. Olive Oil
  • 0.25 tsp. Salt
  • Half Lemon
  • 1 tbsp. Cocktail Seafood Sauce
  • ㅤFry Mix
  • 2 large Egg, Slightly beat the egg (adding in a little bit of water).
  • 1 cup Bread Crumbs
  • 1 cup Flour

Prepare the calamari by slicing it into approx 1cm strips, but do not cut it all the way across, so for creating a fan affect later, set aside.

Select the thickest part of the cucumber. Cut two (4cm-5cm length) pieces of cucumber. Scoop out the cucumber flesh to form a cup.

Finely dice the cucumber flesh. .

Add the diced cucumber, lemon juice and olive oil to the Greek yoghurt. Season with sea salt.

Spoon the filling into the cucumber cup formed earlier and finish with a drizzle of light olive oil.

Heat the oil up to approx 170°C. In a separate bowl coat the calamari with seasoned starch flour. Then dip the calamari into the egg mix, then cover it with the bread crumbs.

Delicately fry the calamari until it is lightly golden and crispy.

Serve with the Tzatziki cup and Cocktail cup , garnish with a lime wedge.
