Cornelian compote and Shah Plov-Azerbaijanian Royal Pilaf

Ingredients:
  • 2 Cups Rice, long grain
  • 1 Cup Dried plums
  • 1 Cup Dried apricots
  • 1 Cup Dried raisins
  • 1 Cup Dried Alcha
  • 3 Large Onions
  • 1 1/2 Lb. Beef
  • 8 Oz. Butter
  • 1/2 Tsp Saffron
  • 5-6 Medium Pita
  • Water to soak the dried fruits
Directions:

Wash the rice. Soak the dried fruits in water. Add some cornelian cherries.

Chop the onions. Dice the beef into smaller cubes.

Melt the butter and roast the onions. Season with salt.

Add diced beef and soaked fruits. Add some water and turmeric powder and cook under a cover.

Boil the water and add salt. Add the rice and cook.

Cut the pita into halves and paste some butter on top of it. Put the pita into a bigger baking dish as per the video.

Add rice inside on the bottom add the fried meat mix and another layer of rice. Put butter on the top and saffron water. Cover with the rest of the pita and bake for about an hour until the pita is baked.
