Khinkali – Georgian Dumplings

Georgian Dumplings are traditionally filled with ground meat baked in the oven or cooked in hot water. These fancy and tasty dumplings are full of flavor and easy to prepare.

Ingredients:
  • Dough:
  • 4 cup Flour
  • 1 1/2 tsp. Kosher salt, plus more to taste
  • 1 cup Water
  • Filling:
  • 8 oz. Ground beef
  • 8 oz. Ground lamb
  • 2 tbsp. Finely chopped cilantro
  • 3 Large Yellow onions, minced
  • Black pepper, to taste
  • Water
  • Black sesame seed
  • 1 Large Egg

Prepare the dough: Mix flour, salt, and water and knead it into a dough. Cover and let it stand until the filling is prepared.

Prepare the ground meat if you don't have it grounded. Chop the onion and the cilantro.

Mix the ground meat with onions, cilantro, salt, and pepper. Add some water and mix properly.

Take the dough and roll it into a strip. Cut it into pieces.

Roll each piece of dough into a round shape.

Fill each piece with the filling and create a dumpling as per the video.

Take a couple of dumplings and put them on a baking tray. Eggwash and sprinkle with black sesame seeds. Bake until the outside is a little golden brown.

Boil water in a big pot and cook the rest of the dumplings until they swim on the top of the water.

Take them out from the water once cooked and taste with black pepper. Enjoy!
