Dolma Three Sisters on Saj, Azerbaijani Cuisine

These three stuffed vegetables are very delicious and juicy. The spicy beef stuffing is the heart of this dish. Serve with fresh herbs and pita bread.

Ingredients:
  • 8 Medium Eggplants
  • 2 Large Onions
  • 8 Large Peppers
  • 11 Large Tomatoes
  • Salt
  • Oil
  • Pita bread
  • 17 oz. Ground beef
  • Cilantro, chopped
  • 25 Pieces Mushrooms
  • Marinade
  • 1 tsp. Black pepper seeds
  • 1 tsp. Paprika
  • 1 tsp. Turmeric
  • 5 Cloves Garlic
  • 1 tbsp. Oil
Directions:

Wash the vegetables. Clean the onion.

Cut the eggplants in the middle. Put salt into the cut.

Remove the seeds inside the peppers but leave the stem on it.

Take out the inside of the tomato but leave the top on it.

Dice the onions.

Remove the salt from the eggplants, squeeze out the juice and wash them.

Add oil to a big frying pan. Fry the eggplants on both sides. Take them out when done.

Fry the onion in the same pan.

Add black pepper seeds, paprika, salt, turmeric powder, oil and garlic to the mortar and crush it.

When the onion is translucent add the ground beef and fry them together.

Add the mixture from the mortar and fry.

Add chopped tomato and fry a little.

Chop the cilantro and add it to the stuffing.

Take the vegetables and fill them with the stuffing.

Leave some oil at the bottom of the pan and fry the stuffed vegetables. Cover and add some mushrooms on the side of it.

Chop some fresh cilantro on top of the ready dish.

When done take them out and serve them with pita bread. Enjoy!
