Jambalaya

“Jambalaya on the bayou” you can have some creative fun when you make a Jambalaya. In this one-pot rice dish, I added some Cajun spice seasoning and cooked the ingredients until caramelized, to produce rich flavors and create a dark tone to the end dish. This is absolutely one of those one-pot rice dishes that you can practically add whatever you like to make your own version I added the jalapeno to mine to give it a kick you can also use any rice you like.

Ingredients:
  • 12 lb. Skinless chicken thighs
  • For Chicken
  • 1/2 tbsp. Cajun seasoning
  • 1 tsp. Salt
  • 1/2 tsp. Pepper
  • 2 tbsp. Olive oil
  • For Sausage
  • 2 tbsp. Olive oil
  • 1 lb. Andouille sausage, sliced
  • For Vegetables
  • 1 cup Chopped onion
  • 1/8 tsp. Salt
  • 1/8 tsp. Pepper
  • cup Chopped celery
  • 1 cup Chopped bell pepper
  • 1 tsp. Cajun seasoning
  • 1 small Jalapeno, seeded and minced
  • 4 cloves Garlic, minced
  • 1 tbsp. Olive oil
  • cup Rinse white rice, preferably basmati
  • 1 tbsp. Paprika
  • tbsp. Cajun seasoning
  • 15 oz. can Petitie diced tomatoes, undrained
  • 34 cup Chicken stock
  • 1 tsp. Hot sauce, optional
  • 2 tbsp. Chopped parsley
  • Garnish
  • 1 tbsp. Parsley

Season chicken with salt, pepper, and cajun spice.

Heat 2 tbsp olive oil in a large skillet or sauté pan over medium-high heat.

Cook the chicken on medium heat, working in batches until golden brown and cooked through. Reserve on the side.

Heat remaining 2 tbsp olive oil add Andouille sausage and cook for 2 minutes. Set aside.

Add the onion, cook for 2-3 minutes. Season with salt and pepper to taste. Add the celery and red bell pepper, cajun seasoning, and cook until lightly golden brown.

Add the garlic, jalapeno, rice, paprika, cajun seasoning, and cook for 2 minutes. Add tomatoes and stock and cook, and add cooked sausage and chicken. Adjust seasonings and add hot sauce to taste.

Add half the parsley.

Transfer to a serving platter and garnish with remaining parsley. Enjoy!
