Classic Apple Pie

Here’s a pastry that will get you out of the bed in the morning! Chef Nick shows you how easy it can be to make a classic apple pie. This simple recipe will have your mouth watering all the way until the first bite. There’s nothing like the smell of freshly-baked apple pie to brighten up your day.

Ingredients:
  • 67 ea. Large apples, cored/peeled, sliced 1/4 inch
  • 1/2 cup Granulated sugar
  • 1/2 tsp. Ground allspice
  • tsp. Ground cinnamon
  • 1 ea. Lemon, zest/juice
  • 1 pinch Salt
  • 1/4 cup Ap flour, for step 3
  • 2 pieces Dough
  • 1 tbsp. Ap flour
  • 4 tbsp. Unsalted butter
  • 1 ea. Egg (for egg wash)
  • 2 tbsp. Milk (for egg wash)
  • 1 tbsp. Coarse sugar for topping

Prepare homemade pie dough using my other video (link is available in the description box above) or thaw frozen, store-purchased dough. (two sheets)

In a large bowl, stir the apple slices, sugar, flour, lemon zest + juice, cinnamon, and allspice together until thoroughly combined. Set filling aside and preheat oven to 375F.

On a floured work surface, roll out one of the discs of chilled dough (keep the other one in the refrigerator). Turn the dough about a quarter turn after every few rolls until you have a circle 12-inches in diameter.

Carefully place the dough into a 9×2-inch pie dish. Tuck it in with your fingers, making sure it is smooth. Prick a pie crust with a fork. Spoon the filling into the crust and discard the leftover juices in the bottom of the bowl. Place 1-cm pieces of butter over top of the apple mixture.

Remove the other disc of chilled pie dough from the refrigerator. Roll the dough into a circle that is 12-inches diameter. Lattice the pie crust. Crimp or flute the edges to seal.

Lightly brush the top of the pie crust with the egg wash. Sprinkle the top with coarse sugar, if using.

Place the pie onto a large baking sheet and bake for 55-60 minutes. If the edges start browning too quickly, wrap lightly with foil.

Allow to cool at room temperature for 3 hours.
