Scalloped Pimento Cheese Potatoes

Pimento cheese relish goes so well in a bake with scalloped potatoes. With that golden crispy cheese topping and all the other flavors that run through this dish. The fresh thyme garlic shallots make for a three-dimensional bake. A slice of baked ham or seared salmon will go well, try it.

Ingredients:
  • Cream
  • 2 tbsp. Butter
  • 2 small Shallot
  • 1 clove Raw garlic, minced
  • 1/8 tsp. Ground black pepper
  • 1/4 tsp. Chile flakes
  • 1/4 tsp. Salt
  • 1 cup Heavy cream
  • 2 stalks Thyme
  • 1 slice Bay leaves
  • After Simmer
  • 1/4 tsp. Ground black pepper
  • 1/4 tsp. Salt
  • Cheddar/pimento Mixtures
  • oz. Sharp cheddar cheese, grated
  • 1/4 cup Whole egg mayonnaise
  • 4 oz. Pimentos
  • 1/8 tsp. Salt
  • 1/8 tsp. Black pepper powder
  • For The Potatoes
  • lb. Yukon gold potatoes
  • 1/4 tsp. Salt
  • 1/4 tsp. Black pepper powder
  • oz. Sharp cheddar cheese, grated
  • 1 tbsp. Pimentos
  • Garnish
  • Fresh thyme, chopped

Melt butter in a pan over medium heat. Add shallots and cook 2 to 3 minutes.

Add garlic and red pepper flakes and cook 1 minute.

Add cream and bring to a simmer. Remove from heat and stir 1 cup of cheddar cheese into the cream until it melts. add thyme and bay leaves, set aside.

Preheat oven to 375°F/190°C.

In a small bowl, stir together【Cheddar/pimento Mixtures】reserving a few of the pimentos to put on top of the casserole.

Grease a casserole dish with butter or cooking spray. Layer half of the potato slices on the bottom of the prepared casserole dish.

Season with salt and pepper.

Spread all of the【Season with salt and pepper】 on top of the bottom layer of potatoes. Layer remaining potatoes on top of pimento cheese. Season with salt and pepper.

Pour cream mixture on top.

Add remaining cheddar cheese and reserved pimentos. Season cream mixture with salt and pepper.

Cover casserole with aluminum foil and bake for 30 minutes.

Remove foil and bake for 15 to 20 more minutes
