  • 2 cup Whole Milk
  • 2 cup Low Salt Chicken Broth
  • 1/2 tsp. Salt
  • 1/2 tsp. Black Pepper Powder
  • 1 cup Ground Corn
  • 1 cup Cheddar Cheese
  • 1/4 cup Butter
  • Sauce
  • 1 tsp. Cooking Oil
  • 8 slices Bacon (thick-sliced bacon strips, sliced)
  • 5 stalks Green Onion
  • 1/4 cup Shallots, Diced
  • 1/4 cup Green Onion, Chopped
  • 3 cloves Garlic, Minced
  • 1/4 tsp. Ground Black Pepper
  • 1/4 tsp. Salt
  • 2 tbsp. Balsamic Vinegar
  • 1 cup Chicken Broth
  • 1 tbsp. Butter
  • Half Lemon, Juiced
  • Shrimp
  • 1 lb. Shrimp
  • tbsp. Cajun Spices
  • 1 tsp. Cooking Oil

In a medium saucepan, heat the broth, butter, milk, salt, and pepper until lightly simmering.

Add the ground corn, reduce heat to medium/low and start to whisk. You will need to whisk constantly until the grits are fully cooked for about 30 minutes.

Add the cheese, and butter, cover, and keep warm.

In a medium saute pan, cook bacon on medium heat until crispy and fat has been rendered.

Save the fat for flavoring the grits and reserve bacon on the side.

Use the same saute pan cook the shallots, green onion, garlic, black pepper, and salt until golden brown.

Add the vinegar and scrape the bottom of the pan to release any browned bits.

Add the stock and reduce to ¼ cup.

Return bacon to the sauce and coat thoroughly.

Peel and clean your shrimp. Toss with Cajun seasoning and set on the side to marinate for 10 minutes.

Heat neutral oil in a heavy-bottomed sautés pan or cast iron over medium-high heat until lightly smoking.

Working in batches, sear the shrimp for 2 minutes on one side, flip and cook an additional minute on the other side.

Heat the grits until warmed, adding optional bacon fat for flavoring.

Spoon onto a plate or bowl, arrange shrimp and drizzle bacon sauce on top.

Garnish with green scallion tops.
