Ingredients:
  • 1 tsp. Olive oil
  • 1 Large Yellow onion, chopped
  • 3 Large Garlic cloves, minced
  • 1 Medium Red bell pepper, chopped
  • 1 Pound Extra-lean ground turkey or chicken (99%)
  • 2 tbsp. Dark or regular chili powder
  • 2 tsp. Ground cumin
  • 1 tsp. Dried oregano
  • 1/4 tsp. Cayenne pepper
  • 1 tsp. Approx. salt, plus more to taste
  • 1/4 Pack Baking soda
  • 1 Can Diced tomatoes or crushed tomatoes
  • 1 1/4 cup Chicken broth
  • 2 Cans Dark red kidney beans, rinsed and drained
  • 1 Can Sweet corn, rinsed and drained
  • 2 tbsp. Shopped cilantro
  • For topping:
  • Shredded cheese to taste, Avocado, Tortilla chips, Cilantro, Sour cream
Directions:

Place oil in a large pot and place over medium-high heat. Add in onion, garlic, and red pepper and sauté for 5-7 minutes, stirring frequently.

Add in ground turkey and break up the meat; cook until no longer pink. Next add chili powder, cumin, oregano, cayenne pepper, and half salt; stir for about half a minute.

Next add in tomatoes, baking soda, another half of salt, chicken broth, kidney beans, cilantro, and corn. Bring to a boil, then reduce heat and simmer for 30 minutes or until chili thickens and flavors come together. Taste and adjust seasonings and salt as necessary.

Garnish with anything you'd like out of the ingredients written above in the “for topping” section.
