Traditional Azerbaijani Baklava, Outdoor Cooking

The fluffy buttered layers, walnut filling, and sweet syrup make this Azerbaijani baklava the ultimate special-occasion dessert for any gathering. The combination of walnuts mixed with sugar, cardamom and vanilla powder, sandwiched between buttery layers of super-thin dough and baked to perfection is heavenly!

Ingredients:
  • - For the fillings -
  • 3 cup Walnuts, toasted and finely chopped
  • ½ cup Sugar
  • 1 tbsp Vanilla powder
  • 1 tbsp Cardamom powder
  • - For the dough -
  • 1 cup Warm Milk
  • 2 tbsp Sugar
  • 1 tbsp Yeast
  • 1 cup Butter, melted
  • 1 tsp Salt
  • 1 Egg
  • 1 Egg white
  • cup All-purpose flour
  • - Syrup -
  • 1 cup Sugar
  • 1 cup Water
  • ½ Lemon, juiced
  • - Egg wash -
  • 1 Egg yolk
  • 1 tbsp Milk
  • - For the layering -
  • 2 cup Butter, melted

For the fillings: In a large bowl, combine the walnuts, sugar, vanilla powder and cardamom powder; set aside.

For the dough: Mix all ingredients for dough and combine well. It will not be a too soft dough. Cover and rest it for 20 min.

Grease a 15-in. diameter baking pan with some of the melted butter.

Divid the dough into 10 equal parts. Take one of the balls and roll it out to 15-in diameter sheet with some flour. If needed, cut the sheet to fit the size of baking pan.

Place one sheet in baking dish; brush with butter. Sprinkle with about 1/3 cup nut mixture. Repeat 9 times, layering one more sheet, brushing with butter and sprinkling with nut mixture. Top with remaining dough.

Cut into 2-in. diamonds with a sharp knife. Then, brush with egg wash on top. Add walnuts inside every diamonds on the top.

Bake at 350°F for 45-55 minutes or until golden brown. For the best result, make sure to take the baklava out after baked 20 minutes and make sure all the gaps are cut-through; drizzle with melted better.

Meanwhile, in a saucepan, combine the syrup ingredients; bring to a boil. Reduce heat; simmer for 10 minutes. Add lemon juice and stir to mix well, uncovered, for 3 minutes.

Pour the syrup over the baklava.
