The Best Chicken Gyro I’ve Ever Made

Create a homemade Chicken Gyro using marinated spiced chicken, grilled to perfection and topped with a homemade yogurt sauce, fresh veggies, all on a warm flatbread can be fun for any weekend family gathering. These are packed with flavor and all made from scratch.

Ingredients:
  • - Potato Wedges -
  • 14 Potatoes, peeled
  • 10 cup Water
  • 3 tbsp salt
  • 1/3 cup Corn starch
  • 1/2 cup Oil
  • - Flatbread -
  • cup All-purpose flour
  • tsp Active dried yeast
  • 1 tbsp Sugar
  • cup Warm water about 105˚F
  • 2 tbsp Olive oil
  • 1 tbsp Salt
  • - For the Chicken -
  • 6 large Organic chicken breast
  • 2 tsp Salt
  • 2 tsp Black pepper
  • 1 tbsp Paprika
  • 2 tbsp Olive oil
  • - Toppings -
  • 1/2 whole Red cabbage, shredded
  • 1/2 whole Cabbage, shredded
  • 2 large Tomatoes, sliced
  • A Handful Spinach leaves
  • A pinch Salt and pepper,
  • - Tzatziki Dressing -
  • 2 cup Plain yogurt
  • 1 large Cucumber, shredded
  • Salt and pepper, to taste

Cut each potato in half lengthwise. Cut each half lengthwise again. If the wedges are too wide, cut them in half lengthwise one more time.

In a large pot, add water and salt, and bring it to a boil. Add the potato wedges into the pot. Once boiling, turn off the heat, and let sit in the water for 5 minutes. Drain then rinse them with cold water in a colander for another 5 minutes.

Transfer the potatoes to a large pan. Add the corn starch and gently toss to coat the potatoes.

In a large skillet, heat 1/2 cup oil. Once shimmering, add the potatoes. Cook for 5 minutes or until golden brown. Flip to the other side and cook another 5 minutes or until golden brown. Flip to the third side and cook another 5 minutes or until golden brown. Season with salt when it's hot.

In a large mixing bowl whisk together water, yeast, and sugar; set aside for 8 to 10 minutes, or until foamy. Whisk in the olive oil and salt. Add flour and stir everything together with a wooden spoon until dough comes together. Cover and rest until the volume doubled in size.

Generously sprinkle flour over your work-area and turn dough onto the floured surface; turn to coat and then knead for 4 minutes. Sprinkle more flour if the dough is sticky while kneading. Cut dough into 7 equal pieces and form each piece into a small ball. Lightly sprinkle each dough ball with flour; cover them with a kitchen towel and let stand for 15 minutes.

Preheat a frying pan over medium-low heat. Take one of the dough balls and, using a rolling pin, roll it out to about a 7-inch circle.

When the pan is hot, pick up the rolled out dough and place it in the pan, and cook for about 1 ½ minutes, or until the top surface is covered with bubbles. Flip the flatbread and cook for 1 more minute, or until golden on the bottom. Remove from pan and transfer to a plate; keep cooked flatbreads covered with a kitchen towel while working with the rest of the dough. Repeat the process with the remaining balls of dough.

Butterfly the chicken breast. Season the chicken with salt, pepper, and paprika. Cover them with olive oil.

Add chicken to grill, and cook, turning occasionally, until chicken is completely cooked through.

Cut the chicken into strips.

In a large bowl, add the yogurt and cucumber. Season with salt and pepper to taste. Mix well.

Lay the flatbread on a big serving plate, spread the yogurt sauce on the flatbread, and fill with chicken, and mixed veggies.
