  • For the dressing
  • 2 tbsp. Olive oil
  • 2/3 cup Onion
  • 1/2 tsp. Ginger
  • 1/4 tsp. Cumin seeds
  • 1/8 tsp. Turmeric powder
  • 1/2 cup Grape tomatoes
  • 1/8 tsp. Ground salt
  • 1/8 tsp. Salt
  • 1/8 tsp. Ground black pepper
  • 2 tbsp. Lemon juice
  • For the salad
  • 4 oz. Baby spinach
  • 1/2 lb. Cooked shrimp
  • 1/2 cup Cooked Green Peas
  • 1/8 tsp. Salt
  • 1/8 tsp. Pepper

Mince the onion and divide the tomato. Set aside.

Pour olive oil into the pot, heat it over medium-high heat, add onion, ginger, cumin seeds, turmeric powder, grape tomatoes, and salt. Stir fry for 3-5 minutes, or until will become soft and transparent.

Put the spinach, shrimp, green pea, salt and pepper in a bowl then mix well. Pour the warm dressing over the salad. Toss well and serve.
