Ingredients:
  • 2 Slices Bacon
  • 1/2 Large Red bell pepper
  • 1/2 Large Tomato
  • 1/2 Large Avocado
  • 1 tbsp. Olive oil
  • 3 Large Eggs
  • 1/8 tsp. Ground salt
  • 1/8 tsp. Ground black pepper
  • 1 tbsp. Shredded mozzarella cheese
  • 1 tbsp. Shredded cheddar cheese
  • 4 Springs Chives
  • 1/2 Large Avocado
  • 4 Small Cherry tomato
Directions:

Dice the bacon, red bell pepper, tomato, and avocado.

Cook bacon, bell pepper, and tomato. Until bacon crisp, drain on paper towels and set aside.

Whisk eggs with a pinch of salt and black pepper.

Preheat a nonstick skillet over medium heat. Add in 1 tablespoon olive oil.

Pour in eggs, use a spatula to pull the cooked curds from the pan’s edges toward the center, allow the raw egg to run underneath, tilt the pan to help move it to the bottom.

Once the eggs are mostly cooked, sprinkle the bacon, bell pepper, tomato, avocado, chives, mozzarella cheese, and cheddar cheese on.

Use a spatula to fold over carefully. Reduce heat to low and cook an additional 1 to 2 minutes, until cooked through.

Transfer to a plate and garnish with sliced avocado, serve immediately.
