This combination of flavors is sooo Italian for generations. this is my favorite let’s make it yours. If you haven’t tried fava beans before give them a try they will impress you with their sweet earthy flavor and super high in vitamin B with many other health benefits.
Spaghetti Pasta With Mussels, Fava Beens, and Pecorino Cheese

- ㅤ ㅤCook The Mussels
- 3 tbsp. Extra virgin olive oil
- 1 lb. Mussels
- 1/4 tsp. Ground Black Pepper
- ㅤ ㅤSauce
- 5 oz. Fresh fava beans
- 1½ tbsp. Chopped shallot
- 2 oz. Chopped almonds
- 1/4 tsp. Salt
- 5 slices Mint
- 2 tbsp. Cream
- 6 oz. Spaghetti
- 1 tsp. Salt
- 1½ tsp. Extra virgin olive oil
- 1½ oz. Pecorino
On the stove heat up a pot or pan and add a little bit of olive oil and add the mussels with all the shells and cook for 4 to 5 minutes. (If the mussels have both sides of the shells and fresh they should be closed before cooking them, once they're cooked they should be all opened. Discard the broken ones before cooking.)
Season with salt and pepper. Remove the mussels from the pan and set aside. Leave the juices in the same pan.
Peeled the fava beans and eliminate the outer skin of each bean.
In the pan add fava beans, diced shallots, almonds, mint, and cream at the end.
Bring to boil water in a pot on the stove with salt. Now drop the spaghetti pasta in the water.
Remove the shells and set the mussels aside, leave 4 mussels with the shells for final plating presentation.
After cooking the ingredients in the pan for 3 minutes, blend finely making a cream in a blender or immersion blender.
If needed add some pasta water in the mixer with the ladle until you have a creamy consistency cream. Set aside.
After the pasta has cooked for 6 to 7 minutes, grab all the pasta with food tongs and drop it in the pan.
Add the cream in the pan with the pasta.
Keep cooking the pasta from 3 to 6 more minutes to your preferred softness. While cooking keeps adding pasta water from the pot where you cooked the pasta to keep the good moisture in the pan where you are cooking the pasta. Finally, add pecorino, and mix well.
Add the mussels and cook for 30 seconds more to 1 minute.
Plate up adding a couple of fresh mint leaves, the whole mussels, and more pecorino. Enjoy!
