Pumpkin Kong Fan | Sichuan-Style Pumpkin Rice

The character “箜” (kong) originated from the local dialect of SiChuan YuZhou area. It is also written as “孔饭”. It was said the original character of “箜 ” had a character of “火” (fire) attached to its right side. In the Dictionary of SiChuan Dialects, this character is described as a method of cooking. In a cooking pot, add a small amount of water, cover the lid tightly, then simmer over low heat until fully cooked.

There are many ingredients that can be used in preparing “Kong dish”. You can make it with or without meat. The salted pork with peas is a typical “Kong dish”. It is not hard to make. Ingredients:
  • 1 qt. Water
  • 1 cup Long grain rice
  • 2 Medium Potatoes
  • 1 1/2 tbsp. Cooking oil
  • 4 oz. Kabocha
  • 1 tbsp. Pixian bean paste
  • 1 tsp. Light soy sauce
  • 1 cup Water
  • 1/2 tsp. Salt
  • Green onion, chopped

First, dice the pumpkin and potatoes and set them aside. Wash the fragrant rice without soaking.

Use a small soup pot, pour water into the water, bring to a boil on high heat, add fragrant rice, and potatoes, and cook until 2-3 minutes. Drain and set aside, then pour out the rice soup in the pot and put it in a bowl for later. Note: Rice soup for boiling rice is very nutritious and can be drunk alone or during meals.

Then take another pot, turn on medium-low heat and pour in the oil, put in the pumpkin, watercress sauce and soy sauce first stir-fry well, then add salt and water, then add drained fragrant rice and potatoes to cover the pumpkin, cover the pot lid. Then turn the small heat basket for 7-8 minutes after opening the lid, and then use a spatula to mix well, according to personal preferences, you can add a little green onion to enjoy!
