Polpettone in Crosta – Meatloaf in Puff Pastry Crust

Polpettone in Crosta is one of the traditional dishes I love from my early childhood. I was helping mamma making a big flavorsome meatball. Try my recipe by cooking the meatloaf before covering it with the puff pastry to avoid the puff pastry from excessively absorbing the cooked meat juices resulting in a crispy and light golden pastry crust.

Ingredients:
  • Meatloaf
  • - For White Bread
  • 3 oz. White Bread
  • 3 oz. Milk
  • - For Ground Beef
  • 16 oz. Ground Beef
  • 6 oz. Sausage Sausage or Chorizo
  • 1 large Egg
  • 4 oz. Parmigiano Reggiano
  • 4 oz. Bread Crumbs
  • 2 tbsp. Onion, Diced
  • 2 tbsp. Celery, diced
  • 1 tbsp. Carrot, Diced
  • 1 tsp. Nutmeg Powder
  • 1 tsp. Oregano
  • 2 tsp. Black Pepper
  • 1 tsp. Sea Salt
  • Puff Pastry Rolls
  • 1 sheet Puff Pastry
  • 2 Large Egg
  • 1 tsp. White Sesame Seeds
  • 1/2 tbsp. Olive Oil
  • Make Mirepoix
  • 1 tbsp. Olive Oil
  • 1/2 cup Onion, Diced
  • 2 tbsp. Celery,diced
  • 2 tbsp. Carrot, Diced
  • 2 cloves Garlic
  • 1/4 tsp. Salt
  • 1/4 tsp. Black Pepper
  • 1 tbsp. Olive Oil (for blend)
  • Salad
  • 3 oz. Spinach
  • 1 cup Cherry Tomato
  • 2 oz. Red Cabbage
  • 1 tbsp. Olive Oil
  • 1/4 tspㅤ Salt
  • 1/4 tspㅤ Black Pepper
  • 1 tsp. White Sesame Seeds

Preheat the oven 375°F / 190°C

Break up the bread place in a bowl with the milk and let soak.

In a medium bowl mix: ground beef, sausage/chorizo, egg, Parmigiano, bread crumbs, onion, carrot, celery, nutmeg, oregano, salt, and pepper, and Mix well.

Add the soaked bread previously squeezed to let milk out. and mix well.

Take a piece of parchment paper and place the mixture in the center and fold the parchment over the meat to form a small loaf shape.

Wrap again with tin foil.

Place in the preheated oven for 15-18 minutes.

Remove the meatloaf from the oven and allow it to rest in the fridge for up to 1 hour this will allow juices to return into the loaf. Keep any excess juices of the meatloaf on the side for the gravy.

Cut stripes diagonally from the puff pastry on the sides of the meatloaf and cross the stripes on top of the meatloaf forming a braid.

Brush the top of the puff pastry with beaten egg and olive oil, and sprinkle with sesame seeds.

Bake in a medium-hot oven for approx 20 to 25 minutes, or until the pastry is a light golden all over.

In a medium-heat pan add the olive oil then add diced onion, carrots, celery, and garlic, salt, and pepper cook gently for a few minutes

Then add the juices from the meatloaf. Let cook for a few minutes longer.

Blend into a puree add extra olive oil to thin out the sauce if you wish.

Mix all【Salad】ingredient together.

Serve your meatloaf on a base of your favorite salad or vegetable alongside your vegetable sauce.
