Ingredients:
  • 2 cup All-purpose flour
  • 1.5 tsp. Baking powder
  • 1/2 tsp. Baking soda
  • 1/2 tsp. Salt
  • 1 tbsp. Unsalted butter
  • 1 Large Egg
  • 0.55 cup Water
Directions:

In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, unsalted butter, egg, and water. Knead the mixture with your hands until it forms a smooth dough.

Cover the dough and let it rest for about 10 minutes. After resting, transfer the dough onto a clean work surface and knead it again until smooth.

Shape the dough into a rectangle, wrap it, and let it rest overnight in the refrigerator, or at room temperature for about 4 hours.

Sprinkle some flour on the dough to prevent sticking, then stretch it out and flatten it with a rolling pin. Roll the dough into long strips, about 1 inch / 2.5-3cm in width. Cover the strips with plastic wrap to prevent drying.

Heat a large pot with cooking oil over medium-high heat while shaping the dough.

Take a chopstick and dip it in water. Draw a line in the middle of one dough strip, then place another strip on top, aligning them. Press down with the chopsticks in the middle and then at both ends to ensure they stick together during frying.

Once the oil reaches 375°F/190°C - 390°F/200°C, fry the dough strips. Hold each end of a strip and stretch it slightly before placing it in the hot oil. The dough will float; continue to turn it with chopsticks until it puffs up. Fry until golden brown on both sides.

Remove from oil and drain on paper towels. Serve the crispy youtiao immediately and enjoy with your favorite dipping sauce or as a side dish.
