Ingredients:
  • 2 cup Rolled oats
  • 1 cup Almonds
  • 1/2 cup Pumpkin seeds
  • 1/2 cup Sunflower seeds
  • 1/2 cup Cranberries
  • 4 Large Apricots (chopped)
  • 2 cup Medjool dates
  • 1/2 cup Peanut butter
  • 1/2 cup Honey
  • 1 tsp. Vanilla extract
  • A pinch of salt
  • 1 tsp. Water (1 or 2 teaspoons)
Directions:

In a heavy-bottomed pan roast 2 cups of rolled oats. Roast on low flame until the oats turn aromatic. Transfer to a bowl and keep aside.

Now take 1 cup almonds, ½ cup pumpkin seeds, and ½ cup sunflower seeds in a pan and roast on low flame until they turn crunchy and also aromatic. Transfer to the same bowl.

Add ½ cup cranberries, and 4 apricots, and mix well. keep aside.

In a bowl take 2 cups Medjool dates, and 2 tbsp water. if you are using regular dates, then soak the dates for 10 minutes minimum to soften. Blend into a smooth paste with an immersion blender.

Transfer the dates paste to the pan along with ½ cup peanut butter. cook on low to medium flame until it is well combined and the mixture turns glossy and separates from the pan.

Transfer the dates peanut butter mixture to the same bowl of roasted nuts.

Also add ¼ cup honey, 1 tsp vanilla extract, and a pinch of salt.

Mix well using your hands. make sure everything is well combined. Mix until it starts to hold the shape. (Do not worry if the mixture is sticky, the oats will absorb moisture).

Now transfer the mixture to the tray lined with baking paper.

Press and level up forming a smooth layer. You can also use the same size pan to press the mixture down firmly. Note: don’t be afraid to press too much, the more you press the better the bars will come out.

Now cover and refrigerate for 4 hours at least. Cut to shapes you wish and enjoy!
