Cook 2 thirds of the fruit with 5oz of sugar for 10 minutes (compote) and let rest in the fridge or freezer until cold. You can use this to layer with the cream. Now start preparing the cream, first of all, wash the eggs well before opening them to separate the yolks from the whites.
Step 3
Step 3
2
Take two bowls and with your hands with the old method, pass each yolk between half and the other of the shell opened in two, until all the egg white falls into one bowl, and the yolk into the other. If you have an egg separator, made of plastic or metal, the job will be easier.
Step 4
Step 4
3
Work the egg yolks with the sugar for a long time with an electric whisk until you get a soft cream.
Step 5

Add the mascarpone and continue to work until it is perfectly blended, the cream obtained must have a dense, smooth and homogeneous consistency.
Step 6

Now beat the egg whites until stiff with a whisk, but clean it first.

Incorporate them into the mascarpone cream with a spatula, being careful not to take them apart, so do it gently. Put the cream in the fridge for at least 10 minutes to set. Set aside some fruit to decorate your tiramisu, putting it in the fridge in a bowl, covered with cling film or aluminum.
Step 8
Step 8
7
Take a juice glass and layer the dipped ladyfingers in juice with the cream and the mixed fruits.
Step 9

Now lay some compote and a layer of mascarpone cream on top. Alternatively, you can mix the fruit in the mascarpone cream and pour it directly on the soaked biscuits.
Step 10

Repeat the operation for a second or even third layer of ladyfingers, fruit, and cream, in any case until the ingredients are finished.
Step 11
Step 11
10
Sprinkle the surface with powdered sugar or cinnamon. If you used fresh oranges for your juice, cut the zest that you did not grate into the cream, into thin strips and decorate the tiramisu on the surface over the sugar or cinnamon. Keep the fruit tiramisu in the fridge for at least 3 hours.
Step 12
Step 12

After the time necessary to cool it well, take it out of the fridge and garnish with the remaining fruit and serve. If you like, give it a sprinkle of powdered sugar or add some dried fruit or a few mint leaves.
Final Notes
Final Notes
For this fruit tiramisu recipe, you don't have to make coffee but choose a good orange juice or blonde oranges and squeeze them to get the two glasses we have indicated. We recommend that you also grate the zest of an orange to add to the juice for the tiramisu filling.
