Ingredients:

  • 17 oz. Whole Milk
  • 2 cup Semolina Flour
  • tbsp. Butter
  • 1/2 tsp. Salt
  • 1/4 cup Parmesan Cheese
  • 1/4 tsp. Nutmeg
  • 2 Egg Yolk
  • 2 tbsp. Olive Oil
  • ㅤCooking prawns
  • 1/4 cup Extra Virgin Olive Oil
  • 6 large Tiger Prawns
  • 1/4 tsp. Salt
  • 1/4 cup Brandy
  • 2 tbsp. White Wine
  • tbsp. Butter
  • 2 small Cherry Tomatoes, Split
  • 1/2 tsp. Ground Black Pepper
  • 1 large Red Thai Chili Peppers
  • 1/2 large Grapefruit Juice
  • 1 tsp. Parsley
  • Assemble
  • 1/4 cup Cucumbers, Sliced
  • 4 Mint Leaves
  • 4 slices Radish
  • tsp. Parmigiano-Reggiano
  • 2 slices Lemon
  • 1 small Cherry Tomatoes, Split

In a pot heat up the milk with the butter in it to a simmer.

After the milk and butter mixture is lightly boiling add the semolina flour gradually while whisking continuously.

After you have poured all the semolina keep stirring with a wooden spoon for 2 minutes.

Add egg yolk, nutmeg, Parmigiano, and keep stirring for another 2 to 3 minutes.

Let sit in the pot for 3 minutes and roll the mixture into parchment paper making tube shape with the mixture (2 to 3 inches in diameter) and fold the end of the “tube”.

Cover with non-stick parchment paper. Let rest in the fridge for 1 to 2 hours.

Remove it from the fridge/freezer and unwrap it. On a cutting board cut discs approximately 1/2 inch thick and lay on a tray with parchment paper. Pour in oil and sprinkle with cheese.

Put in the oven for 15-20 minutes.

Heat up a pan until burning hot. Add oil, prawns with the shells, salt, brandy, white wine, butter, tomatoes, black pepper, red that chili peppers, grapefruit juice, and parsley.

Assemble prawns and gnocchi.
