Ingredients:
  • lb. Pre-cooked rotisserie chicken
  • 12 tbsp. Olive oil
  • 1 cup Onion
  • 1/2 cup Carrots
  • 1/2 cup Celery
  • 4 cloves Garlic
  • 2 sprigs Thyme
  • 10 sprigs Parsley stems
  • 1 tsp. Black pepper
  • 2 pc. Bay leaves
  • 1/2 cup White wine
  • 4 qt. Water

Pick meat from the chicken and reserve it for another purpose. Roughly break down the chicken carcass.

Using the sear function on a pressure cooker, lightly saute vegetables and chicken carcass. Deglaze with wine and add remaining ingredients. Seal and pressure cook for 15 minutes or manufacturer recommendations.

The foam may rise to the top. Use a ladle to skim and remove. Strain through a mesh colander. Cool and reserve or use immediately.
