Dark Chocolate Lava Cake with Berries

If you love chocolate, you’ll want to watch this. Chef Nick shows us how to make mini chocolate lava cakes that we’ll be garnishing with berries, chocolate syrup, and fresh homemade whipped cream. You’ll find this to be surprisingly easy and quick to make. This recipe makes 8 6oz ramekins, the perfect serving size for a small dessert.

Ingredients:
  • Spray oil
  • 2 tbsp. Ap flour
  • 12 oz. Dark chocolate bar
  • 8 oz. Unsalted butter
  • 4 ea. Eggs
  • 4 ea. Egg yolks
  • 1/2 cup Sugar
  • 2 tsp. Vanilla extract
  • 1/4 tsp. Fine salt
  • 1/4 cup Ap flour
  • Whipped cream
  • 4 cup Heavy cream
  • 1/2 cup Powder sugar
  • 1 tbsp. Vanilla extract
  • Garnish
  • Chocolate sauce
  • Mixed berries

Preheat oven to 450°F/230°C.

Grease and flour eight 6-ounce ramekins, shaking out excess flour.

Set up a double boiler, over simmering water, and melt the butter and the chocolate together, whisk until smooth and turn off the heat.

In a separate bowl, beat the eggs with the egg yolks, sugar, vanilla and salt at high speed until thickened and pale.

Remove the chocolate mix from the double boiler, fold into the egg mix, add the flour together. Spoon the batter into the prepared ramekins and bake for 12 minutes, or until the sides of the cakes are firm but the centers are soft.

Let the cakes cool in the ramekins for 1 minute, then cover each with an inverted serving plate. Carefully turn each one over, let stand for 10 seconds and then unmold. Serve immediately with fresh berries, whipped cream and a chocolate sauce (to adhere the fruit to the top of the cakes)
