Chocolate Lava Cake

Ingredients:
  • 1/2 Cup Butter unsalted
  • 9 Oz. Bittersweet high-quality chocolate (we used milk chocolate Hershey kisses)
  • 2 Ea. Eggs
  • 2 Ea. Egg yolks
  • 1/3 Cup Sugar
  • A pinch of Salt
  • 2 Tbsp Flour (flat)
  • 1 Tsp Vanilla extract (optional)
Directions:

Butter two ramekins and dust with flour lightly, then tip out any excess. Chop the chocolate into small pieces and put the chocolate pieces with the butter in a heatproof bowl and set over a pot of hot water, stir until smooth, don't overheat. Set aside and keep warm.

In a large bowl, add the eggs, sugar, and vanilla extract and whisk them all together until pale and thick. Pour the melted chocolate mixture into the egg mixture, stir until completely smooth. Add the sifted flour and fold to incorporate.

Pour or spoon batter evenly into each prepared ramekin until about 80% full. Preheat the oven to 450F, then bake for 7 to 8 minutes or until the sides are firm and the centers are soft.

Let the lava cakes cool in the ramekins for 2 minutes only, then invert onto plates. NOTE: if you keep it longer inside the ramekin it will carry over cooking with the heat of the ramekin.

Dust with powdered sugar and/or fresh fruits and serve immediately.
