Chicken Soup With Ginkgo Nuts

Ingredients:
  • 1 Whole Chicken
  • 2 Stalks Green Onion
  • 3 Slices Ginger, Sliced
  • 1 tbsp. Shaoxing Wine
  • 1/2 tsp. Salt
  • 1/4 tsp. White Pepper
  • 1 qt. Salted Chicken Stock
  • 1 cup Gingko Nuts
Directions:

Place the whole chicken on a deep plate, breast side up. Season it with Shaoxing cooking wine, salt and white pepper, ginger slices, and scallions. Rub seasoning over the outside and inside of chicken. Then, stuff ginger slices and scallions into the cavity of the chicken.

In a large pot with boiling water, add the chicken and bring it to a boil.

In a large casserole, add the chicken, chicken broth, and the ginkgo. Bring it to a boil over high heat. Note: Don't add too much chicken broth, just over 2/3 of the whole chicken.

Then, transfer the whole casserole into the steamer, covered, and steam on low heat for 30-35 minutes. Season with a pinch of salt and white pepper to taste.
