Baked Potato with Sour Cream & Bacon

One of the most delicious side dishes, baked potatoes filled with cheese and topped with sour cream and fried bacon garnished with green onions. A loving harmony of flavors for a quick dinner is a perfect choice.

Ingredients:
  • 1 lb. Small red or Yukon potato
  • 3 tbsp. Olive oil
  • Kosher salt to taste
  • 1 Pack Sliced cheese of your choice; cut into small slices
  • 1 Tub Light sour cream
  • 1 Pack Cooked bacon, chopped
  • 35 Stalks Sliced green onions

Preheat oven to 400 F/104 C. Grease baking sheet lightly with oil.

Use a sharp knife to make several cuts through each potato, making sure not to cut all the way down. Place potatoes on the baking sheet and rub with olive oil. Sprinkle lightly with salt.

Bake for 30 minutes until the potatoes are tender. Place cheese slices in between the cuts of each potato. Return the tray into the oven for another 5 minutes until cheese has melted.

Let cool for 10 minutes, top with sour cream, bacon, and green onions. Serve warm or at room temperature.
