Ingredients:
  • 3 Large Egg whites
  • 10.5 oz. Sugar
  • 7 oz. Water
  • 3.5 oz. Corn syrup
  • 0.7 oz. Powdered gelatin
  • 3.5 oz. Cold water
  • Food coloring
  • Starch
Directions:

Separate the yolk and white of the egg.

Mix the powdered gelatin with water. Mix until the powdered gelatin has absorbed all of the water.

Mix water with sugar and corn syrup. Boil the syrup over medium heat. Turn off the heat when the syrup starts to thicken.

Whip the whites at high speed to increase the foam. When the whites start to get rich, whip at high speed while pouring the syrup little by little. Whisk the meringue until it retains the shape of the horn when it is lifted.

Heat the gelatin in a microwave to melt it. Filter it through a sieve. Whip slowly and mix the gelatin and meringue.

Split the meringue dough to color it. Finish coloring quickly before the gelatin hardens.

Apply a thin layer of oil to the mold to fill the dough. Spread the starch thinly.

Take a tablespoon of the pigmented marshmallow dough. Refrigerate for at least 1 hour. Spread the starch thinly.

Spread the starch thinly on the top of the chilled marshmallows in the mold. Insert the knife into the edge of the frame and separate it. Spread the starch thinly. Apply a thin layer of oil on the knife and cut it to the size you want. Spread the cut marshmallows evenly over the starch.
