Ingredients:
  • 1 Qt Vegetable Stock
  • 1 cup Mushroom
  • 4 medium Mini Sweet Bell Peppers
  • 1 cup Baby Corn
  • 2 sprigs Lemongrass
  • 8 slices Alpinia Galanga
  • 1/4 cup Cilantro
  • 1/4 cup Mung Bean Sprout
  • 1 large Ginger, Sliced
  • 5 slices Kaffir Lime Leaves
  • 1 medium Roma Tomato
  • 2 small Shallot
  • 1 medium Lime Juice
  • 1/4 cup Basil
  • 1/2 half Purple Onion
  • 1 lb. Jumbo Shrimp
  • ㅤSeasoning
  • 2 tbsp. Fish Sauce
  • 2 tbsp. Coconut Aminos
  • 3 tbsp. Sweet Chili Sauce
  • Garnishㅤ
  • Chile Powder
  • Lime
  • Cilantro

Large Stockpot medium-low heat. Place 4-6 cups of vegetable stock into the stockpot. This process cuts the cooking time down and adds additional full-bodied flavors.

Sliced white button and shiitake mushrooms, mini sweet bell peppers, baby corn, Alpinia galanga, cilantro, mung beans, ginger, Roma tomato, shallot, lime juice, basil, and purple onion.

Slice the lemongrass into 1 1⁄2 inches and crush them to break and loosen. Remove the harder husk and place it into the stock.
