These Japanese-style Soufflé Pancakes are incredibly light and fluffy. The pancakes are cooked in a skillet just like regular pancakes but the batter involves a meringue, which is what makes these so much lighter.

  • 32 g All purpose flour, 4⅔ tbsp
  • 25 g Sugar, 2⅓ tbsp
  • 18 g Milk, 1 tbsp
  • 1 tsp. Baking Powder
  • 2 Egg
  • 1 tbsp. Cooking oil

Separate egg whites and egg yolks into two different bowls.

Preheat a large non-stick frying pan over low heat. Brush with cooking oil and lightly remove any visible oil.

Add milk to the bowl with egg yolks and whisk until thick and frothy.

Sift the all-purpose flour and baking powder into the egg yolk mixture. Whisk to combine thoroughly (but do not over-mix) and set aside.

When the egg whites turn frothy and pale white, gradually add in sugar (roughly 1/2 at a time). Continue to whip the egg whites until it becomes glossier and firmer.

Stop beating when you lift up the hand mixer and the egg whites stand right up with stiff peaks slightly bending over.

Combine egg whites and egg yolk mixture. Take ⅓ of egg whites and add to the egg yolk mixture. Next, take the rest of the egg whites and add to the egg yolk mixture. Using a spatula, gently fold in without breaking the air bubbles in the egg whites. Make sure to gently mix the batter thoroughly!

Scoop the batter and place on the frying pan and cover with the lid. Cook over low heat for 5 minutes.

Using the offset spatula, gently flip the pancake and cover with lid. Cook over low heat for 5 minutes. Once they are nicely browned, transfer the pancakes to your serving plates.

Dust the pancake with powder sugar and drizzle with honey. Add your favorite fruits for the toppings. Enjoy!

Make sure you sift the cake flour into the batter, otherwise it will make the batter too heavy.
