Ingredients:
  • 8 Pieces Digest Cookies
  • 2.1 oz. Melted butter
  • 1.4 oz. Cream cheese
  • 0.7 oz. Sugar powder
  • 1.7 oz. Whipped cream
  • Strawberry
  • 0.7 oz. Powdered gelatin
  • 2.8 oz. Coldwater
  • 1.4 oz. Lemon juice
  • 2.1 oz. Sugar
  • 7 oz. Warm water
  • 14.1 oz. Coldwater
Directions:

Grind the cookies finely. Mix the melted butter so that it permeates the cookie powder well. Spread the cookie dough carefully and make it flat. Press the bottom of the cup or bat to fix it tightly.

Wash the strawberries clean and remove moisture. Remove the stem and cut it in half. Put the cut surface on top of the kitchen towel to absorb the juice.

Use a hand mixer or a spatula to lightly mix cream cheese. Mix with sugar powder.

Whip the whipped cream until it's firm.

Apply a thin layer of cream on the bottom. Use a spatula to trim the gaps and protruding areas. Put the strawberry in the middle and fix it. Put the strawberries that you cut in half.

Put it in the refrigerator for 30 minutes to an hour to harden the cream.

Mix well the gelatin powder with the cold water. If you're done mixing, leave the gelatin for a while (10 minutes). Mix warm water, lemon juice, and sugar. Stir hot water until the sugar melts. Heat the gelatin in the microwave for 15 to 20 seconds. Put the melted gelatin in warm water and mix it. There might be gelatin that hasn't melted, so filter it out through a fine sieve.

Add cold water to it and cool down the jelly water. Remove the foam from the surface of the jelly water.

Pour the jelly water on the top of the cake. Be careful when you pour jelly water so that you don't get bubbles. Store it in the refrigerator for more than 4 hours to harden the jelly.

Separate the mousse ring from the mousse band. Open the gap and separate it. Put a hot towel around the surface and remove the mousse band.
