Granola Bars With Honey Yogurt and Fresh Berries

The healthiest granola bars are the homemade ones and you can add your personal mix-ins to suit your taste. My take is packed with unrefined and natural ingredients that are high in omega protein and fiber. They are chewy and flavorful. Makes for a great breakfast along with fresh fruit and yogurt, or a lunch box treats snack option.

Ingredients:
  • Granola Bars
  • 1/4 cup Coconut oil
  • cup Almond butter, or other nut butter of choice
  • 1/2 cup Honey, maple syrup, or agave
  • 1 tsp. Vanilla extract
  • cup Cashew nuts, or sub nuts of choice
  • 1/2 cup Dried blueberries, sub dried fruits of choice
  • 1/4 cup Toasted, unsweetened coconut flakes
  • 2 cup Old-fashioned oats
  • 1/2 tsp. Fine sea salt
  • 1 tsp. Ground cinnamon
  • Honey Vanilla Yogurt and Fresh Berries
  • 1 cup Plain yogurt
  • 1 tbsp. Honey
  • 1 tsp. Vanilla extract
  • 1/4 cup Your choice of berries

In a double boiler with a medium bowl, heat coconut oil, honey, and almond butter. Whisk until combined and warm, add vanilla extract.

In a food processor, blender or by hand, chop nuts, blueberries and coconut flakes if needed. Then add the rest and run the machine for a few more seconds, until the ingredients are all broken up into pieces smaller than your pinky nail.

Pour the mix-ins into the bowl.

Pour the oats in a large mixing bowl with cinnamon and salt, and stir to combine.

Mix into a large bowl of oats until completely combined.

Line an 8x8-inch square pan with parchment.

Press into a prepared square pan, cover, and refrigerate for at least one hour before slicing into desired sizes.
