Ingredients:
  • 0.25 cup Strawberries, Chopped
  • 1 count Ripe Mango, Peeled, Cored, and Sliced
  • Custard
  • 1 cup Whole Milk
  • 2.5 cup Sugar
  • 4 large Egg, Slightly Beaten
  • 1 oz. Gelatin, Soaked in Water Until Soft
  • 1 tbsp. Unsalted Butter, Softened

Fill a pot about 1/4 full with water and bring to a boil. Reduce the heat to a simmer and fit the bowl into the pot.

In the bowl, whisk milk and sugar constantly until the sugar is dissolved.

In the same bowl, slowly incorporate together the slightly beaten egg into the hot milk mixture.

Add the water-soaked gelatin and heat the custard over low heat(above 175°F / 80°C) for about 5 minutes or until thickened slightly, stirring constantly. (It should be thick enough to coat the back of a spoon. Do not let the mixture come to a simmer or the eggs will curdle.)

Remove from heat add 1 tablespoon unsalted butter until smooth. (If you want a thicker custard, do not use the butter.) Immediately strain the custard into a small bowl. Place in the refrigerator to cool.

Chop the kiwis, mango, and strawberries into bite-size pieces.

Place 2~3 tbsp diced fruits in the bottom of the serving cups.

Pour the chilled custard over fruits until 80% full and refrigerate at least for 1 hour.

Top with another 3~4 tbsp fruits and serve.
