Crispy Fish Fillet in Lemon Sauce

Ingredients:
- 12 oz Rex Sole fish
- 2 cup Corn Starch
- 3 count Egg Yolk, Beaten
- 2 cup Bread Crumb
- 1 tsp Salt
- 1 pinch Black Pepper Pinch
- 0.25 cup Fresh Squeezed Lemon Juice
- 1 cup Water
- 1 count Lemon, Cut Into 6 Wedges,
- 0.5 tbsp Sugar
- 1 tsp Salt
- 1 tbsp Custard Powder

Cut fish into 2-3 inch pieces, sprinkle salt and pepper over fish.

Coat fish with Cornstarch, egg and bread crumb.

In a large skillet heat oil to 150-180 °C / 300-350 °F. Fry fish until golden in both sizes. Turn over fish pieces occasionally.

Making sauce: In a large skillet over medium heat, combine all ingredients for sauce, stir and simmer for 5 minute. Add flour or starch to thicken.
