Falafel and Chicken Gyros

  • 1 tsp. Cumin
  • 1 tsp. Smoked paprika
  • 1 tsp. Ginger powder
  • 1 tbsp. Garam masala
  • 2 cloves Garlic, grated
  • 3 tbsp. Extra virgin olive oil, divided
  • 1/2 tsp. Salt
  • 1/2 tsp. Pepper

  • 2 cup Chickpeas
  • 1/2 ea. Brown onion
  • 4 ea. Green onion
  • 4 cloves Garlic, grated
  • 2 ea. Lemon zest
  • 2 tsp. Cumin
  • 1 tbsp. Coriander
  • 2 ea. Serrano chili
  • 2 bu. Parsley, chopped
  • 2 tsp. Salt
  • 1/2 tsp. Pepper
  • 1/2 tbsp. Baking powder
  • 1/4 cup Flour
  • 1/4 cup Sparkling water
  • Salad
  • 1 ea. Cucumber, sliced
  • 4 ea. Radishes, sliced
  • 1/4 cup Kalamata olive
  • 1/2 large Red onion, sliced
  • 2 cup Cherry tomatoes, cut in half
  • 1 tsp. Oregano
  • 1 tbsp. Red wine vinegar
  • 2 tbsp. Extra virgin olive oil
  • 1 clove Garlic, grated
  • 1/2 ea. Rosemary
  • 1/2 tsp. Salt
  • 1/2 tsp. Pepper
  • Tabbouleh salad
  • 1/4 cup Quinoa, cooked
  • 1 ea. Cucumber, cut into small dice
  • 2 ea. Tomato, cut into small dice
  • 1/2 cup Mint
  • 4 ea. Green onion, chopped
  • 2 Bu Parsley, chopped
  • 2 tbsp. Lemon juice
  • 1 tsp. Garam masala
  • 1/2 tsp. Salt
  • 1/2 tsp. Pepper
  • 2 tbsp. Extra virgin olive oil
  • Dill sauce
  • 2 tbsp. Dill, chopped
  • 1 cup Greek yogurt
  • 2 tsp. Lemon juice
  • 0 Extra virgin olive oil
  • 1/2 tsp. Salt
  • 1 clove Garlic, grated
  • Tahini sauce
  • 1 cup Tahini
  • 1 tsp. Cumin powder
  • 4 cloves Grated garlic
  • 1/4 cup Lemon juice
  • 1/2 tsp. Salt
  • 1/2 cup Water

In a bowl whisk the coriander, cumin, smoked paprika, ginger powder, gram masala, 2 tbsp olive oil, grated garlic, and red wine vinegar, season with salt and pepper.

Dice chicken thighs into large pieces. Mix in a bowl with the【Marinade】spices. Marinate for 30min to 2 hours.

Soak chickpeas in water over night or at least 6 hours.

In a blender grind the chickpeas, onion, green onion, garlic, lemon zest, cumin, coriander, serrano chili, parsley, salt, and pepper. Marinade for 30 minutes.

In a medium bowl, whisk red wine vinegar with oregano, grated garlic, olive oil, rosemary, season with salt and pepper. Toss the tomato, cucumber, kalamata olives, and radishes.

Mix quinoa with parsley, cucumber, tomato, grated garlic, mint, green onions, cherry tomato quartered, lemon juice, garam masala, season with salt and pepper, and olive oil.

In a separate bowl, whisk yogurt, lemon juice, grated garlic, olive oil, salt, and dill.

In a medium bowl whisk tahini, grated garlic, cumin powder, salt, lemon juice, and water.

Grill the pita with olive oil on a cast-iron skillet or pan until each side is light brown. Season with salt and sumac.

Skewer the marinated chicken and drizzle 1 tbsp olive oil before grilling.

Add baking powder, flour, and sparkling water to the ground chickpea bowl, and mix well.

Form chickpea mix to 2 inch balls and fry them at 350°F/170°C until browned

Assemble the yogurt dip, chicken skewer, and Greek salad, and grilled pita.
