Easy Stuffed Bread Omelette

Ingredients:
  • 5 Slices White bread loaf
  • 1/2 Large Sweet pepper
  • 3 Large Green onion
  • 1 Large Sausage
  • 6 tbsp. Corn
  • 6 tbsp. Peas
  • 1/2 tsp. Salt
  • 2 Large Eggs
  • 4 Slices Mozzarella cheese
  • 2 tbsp. Oil
Directions:

Dice the pepper into small cubes and chop the green onions.

Dice the sausage into small pieces.

Slice the white bread and cut out the center of each slice to create a pocket, as shown in the video.

In a pan, heat a little oil over medium heat. Add the diced sausage, peas, corn, chopped green onions, and diced sweet pepper. Sauté the vegetables and sausage mixture for a few minutes until they are slightly softened. Remove from heat and transfer to a bowl.

Crack the eggs into the bowl with the cooked vegetables and sausage. Mix everything together until well combined.

Heat a little oil in a pan over low heat. Place one slice of prepared bread into the pan.

Spoon some of the vegetable and sausage mixture into the center of the bread slice. Top with a slice of mozzarella cheese. Place another bread slice on top to form a sandwich.

Cook the stuffed bread omelette on one side until golden brown, then carefully flip it over to cook the other side until golden brown and the cheese is melted. Once both sides are golden brown and the cheese is melted, remove the stuffed bread omelette from the pan and transfer it to a serving plate.

Repeat the process with the remaining bread slices and filling. Serve the stuffed bread omelette hot and enjoy!
