Dome-shaped five layer cocoa cake is filled with generous layers of coffee cream, caramel cereal and walnut lining, and garnished with fresh mint.

Ingredients:
  • 5.5 tbsp. Walnut Crumbs
  • 5.5 tbsp. Caramel Cereal
  • 5.5 tbsp. Coconut Cookies, Crushed
  • 1.3 oz. Butter
  • Egg Yolk Mix
  • 8 count Egg Yolk
  • 3 oz. Water
  • 2.5 oz. Vegetable Oil
  • 0.5 cup Flour
  • 4 tsp. Cocoa Powder
  • 1 tsp. Baking Powder
  • 1 pinch Salt
  • Egg White Mix
  • 8 count Egg White
  • 0.6 cup Sugar
  • 1 tsp. Cream Of Tartar
  • Filling
  • 2.5 tbsp. Coffee
  • 1 oz. Boiling Water
  • 10 oz. Heavy Cream
  • 2 tsp. Gelatine
  • Glazing
  • 5 oz. Condensed Milk
  • 6 tsp. Coffee

Preheat oven to 350°F/175°C

Beat egg white, sugar and cream of tartar at high speed till soft peak formed.

In a large mixing bowl, blend egg yolks, water and oil, then add flour, cocoa powder, baking powder and salt, mix thoroughly. Fold in about ⅓ of whipped cream and mix well.

Pour batter into a large shallow baking pan, bake at 350°F/175°C for 15 minutes, cool at room temperature.

Cut cake into 4”,5”, 6”, 7” and 8” circles.

Combine coffee and hot water and mix well then add in gelatine constantly stir until gelatine are melted. Cool down to 20°C

Mix coffee mixture and whipped cream thoroughly.

Using a 8” mixing bowl, place 4” circle at bottom, spread on one layer of coffee cream, repeat for each layers. Refrigerate for 1 hour.

Combine condensed milk and liquid coffee and mix well for glazing.

Use a food processor, at low speed, mix butter, walnut, coconut cookies and caramel cereal thoroughly.

Shape the mixture into about 2 inch strip(make sure it’s long enough to circle bottom of the cake)

Remove cake from the bowl, flat side down, put one layer glazing, and circle the bottom with prepared lining.
