Creamy Garlic Butter Tuscan Salmon

Ingredients:
  • 4.5 lb. Salmon
  • Salt, to taste
  • Pepper, to taste
  • 1 tbsp. Olive Oil
  • 4 cloves Garlic
  • 1 count Onion
  • 1.5 tbsp. Butter
  • 5 oz. Jarred Sun Dried Tomato Strips
  • 0.25 cup White Wine
  • 1.75 cup Heavy Cream
  • 3 cup Baby Spinach
  • 0.5 cup Parmesan Cheese
  • 2 tbsp. Fresh Parsley
  • 1 tsp. Sesame

Seasoning the salmon portions on both sides with salt and pepper.

Heat the oil in a skillet over high heat. Sear the salmon in the hot pan, flesh-side up first for 5 minutes on each side. Once cooked, remove the fillets from the pan. Set aside.

In the same pan, add olive oil, garlic, onion, and butter; then stir fry until fragrant (about 1 minute). Add the sun-dried tomato strips, white wine and fry for 1-2 minutes. Reduce heat to low heat, add heavy cream, and stir occasionally. Seasoning with salt and pepper to taste.

In the same pan, return the salmon back into the skillet, stir in the spinach leaves, parmesan cheese, parsley, and sprinkle with sesame.
