Ingredients:
  • Custard cream:
  • 3 Large Egg yolks
  • 1.76 oz. Sugar
  • 1 cup Milk
  • 1 oz. Butter
  • 0.88 oz. Cake flour
  • Dough:
  • 8.8 oz. Cake flour
  • 4.5 oz. Milk
  • 0.17 oz. Yeast
  • 1.41 oz. Sugar
  • 0.1 oz. Salt
  • 0.7 oz. Butter
  • 1 Large Egg
  • Syrup for topping: 3.5 Oz. sugar, 1.7 Oz. water
Directions:

Custard cream: Warm the milk.

Mix eggs, sugar, and flour and stir until thickened.

Divide the milk into 3~4 times and mix until the cream is not cooked. Strain 4.3 through a sieve and boil over low heat until thickened.

When the cream starts to boil, reduce the heat as low as possible. Add butter and mix.

Put the cream in a container and close the plastic wrap, then cool it down.

Bread dough (makes 7-8 donuts): Sift the flour, then mix yeast, sugar, and salt.

Add egg, milk and mix the dough.

When the dough is lumped, put the dough on the kneading board. Knead until smooth.

When the dough starts to become smooth, add butter and knead the dough.

When the dough becomes smooth, transfer it to a clean bowl. Place a damp cloth on top and let it ferment until doubled in size.

Spread the fermented dough to a thickness of 0.5cm. Cut the dough using a 7-8cm cookie cutter.

Spread the dough with a wide gap, then cover with a wet cotton cloth. Ferment until doubled in size.

Heat enough oil and cook the dough on both sides until golden brown.

Punch holes in the fried donuts and fill them with custard cream.

Topping: Sprinkle with sugar for topping. Mix sugar water and boil until dark golden color. Apply 1-2 coats to harden.
