Chocolate Truffles

Relax and destress with Chocolate truffles prepared with milk, dark or white chocolate. It is easy, just prepare the mix of chocolate with warm cream, create the truffles and use a coating of your choice. Enjoy!

Ingredients:
  • 6 Oz. Heavy cream (*4 if using white chocolate)
  • 8 Oz. Chocolate (dark, milk, or white*)
  • 1/4 Tsp Salt
  • 1 Cup Dehydrated raspberries
  • 1/2 Cup Hazelnuts
  • 1/2 Cup Cocoa powder, sifted
  • 1/4 Cup Matcha
Directions:

Bring cream to a simmer. (If flavoring cream, add flavorings, such as orange peel, loose-leaf tea, or fresh herbs to cold cream, then strain simmered cream over chocolate in the next step.)

Pour over the finely chopped chocolate and salt, and let sit one minute.

Whisk chocolate and cream together and pour into a piping bag or leave in a bowl, tightly covered with plastic wrap, then chill in the fridge until firm.

To shape truffles, scoop (or pipe) into 1/2 Tbs. pieces. Set up your bowl with cocoa powder, matcha, dehydrated raspberries, or finely chopped hazelnuts.

Roll truffles in your hands (wearing gloves, if you have them), then fill with a whole hazelnut, if using, and roll in the coating of your choice.

Chill until hardened, then store in an airtight container for up to a week.
