Ingredients:
  • 4.9 oz. Dark chocolate
  • 2.1 oz. Non-salt butter
  • 1/2 tsp. Salt
  • 2 Large Eggs
  • 4.2 oz. Brown sugar
  • 1.7 oz. Multi-purpose flour
  • 0.7 oz. Cocoa powder
Directions:

Into a smaller bowl add chocolate, butter, and salt, and melt it in the microwave.

Mix the eggs with the sugar. Stir until sugar is dissolved in egg water. Put the mixture above a bowl with warm water.

Stir until the egg water is warm and the coarse particles of sugar are all melted. Whip the eggs fast until they are thick and bright.

When the dough comes up white, whisk it at low speed to clear the bubbles in the dough.

Whip at low speed and mix in the melted chocolate.

Sift in the flour and the chocolate powder. Add chocolate nibs and mix it all together. Mix the powders evenly so that they don't get lumpy.

Add the batter to the mold coated with parchment paper and oil. Pat the mold on the floor two to three times to flatten the surface of the dough and clear the air bubbles.

Bake at 338 °F/170 °C for 20 minutes.

Cool the finished brownies completely and remove them from the mold. Cut them into bite-sized pieces.
