  • 1/4 cup All-purpose flour
  • ㅤCook The Potatoes
  • Qt Water
  • 2 tsp. Salt
  • lb. Red bliss potatoes
  • ㅤHalf & Half Mixture
  • 1/2 cup Half & Half
  • 4 tbsp. Unsalted butter
  • 1 sprig Thyme
  • 1/2 tsp. Ground black pepper
  • 1 tsp. Salt, divided
  • 4 oz. Fresh goat cheese
  • 1/4 tsp. Ground black pepper
  • 1/4 cup Chives
  • Gravyㅤ
  • 2 tbsp. Butter
  • 2 cloves Garlic
  • 2 tbsp. All-purpose flour
  • 1 sprig Thyme
  • 1 cup Beef broth
  • 1/2 tsp. Ground black pepper
  • 1/4 tsp. Salt

Dust the pork chops with salt and pepper.

Cover evenly with Wondra flour. Set aside.

In a large pot, cover potatoes with water and add the salt. Bring to a simmer for 20-30 minutes or until tender.

Heat half and half, butter, and thyme in a small saucepan until warm.

Fold in goat cheese and chives, adjust seasoning.

In a cast-iron large enough to fit both chops, heat the oil until lightly smoking. Cook pork chops on medium for about 5-6 minutes. Turn and cook 5 minutes more.

Remove from cast iron and allow it to cool.

In the same cast-iron, add butter and scrape the browned bits off the bottom. Add the crushed garlic and cook 2 minutes.

Add the flour and cook into a roux for 3-4 minutes.

Add the fresh thyme and bone broth. Bring to a simmer and cook until the desired thickness, 5-10 minutes. Season with salt and pepper.

Strain the potatoes and place them in a large bowl. Gently smash with a wooden spoon.

Add Chives and mix well.

Check the temperature, if the internal temp is not 160°F/71°C, place in oven until cooked through.
