Cauliflower Crust Pizza With Ricotta Tomatoes and Basil

A guilt-free Margherita-style pizza with a cauliflower crust. I promise you this will be the best and crispiest cauliflower crust you’ve eaten. Ingredients:
  • Pizza
  • 5 tbsp. Ground flaxseed to replace the egg for binding.
  • 1 tbsp. Cooking oil
  • 5 cup Riced cauliflower
  • 1 tsp. Salt
  • 1/2 cup Flour
  • 1/2 cup Nutritional yeast
  • 1 tsp. Dried oregano
  • 1/2 tsp. Crushed chilies
  • 1 tsp. Dried basil
  • 1 tsp. Garlic powder
  • Topping -
  • 3 large Tomatoes heirloom sliced
  • 1 pinch Salt
  • 1 pinch Crushed chili flakes
  • 1 cup Vegan (or regular) ricotta
  • 1/2 cup Vegan (or regular) mozzarella
  • 1/2 cup Basil oil
  • Garnish
  • 2 tbsp. Basil leaves
  • 1 pinch Crushed chili flakes.

Preheat the oven to 450°F/220°C, line a baking sheet with parchment paper.

Mix the flaxseed and water to create your (egg replacement) binder and allow it to sit for 15 minutes until sticky and gooey.

Warm the oil in a nonstick pan over medium heat. Add the cauliflower rice and salt, cook for about 5-8 minutes stirring frequently. Remove from heat and allow to cool slightly before you squeeze all the liquid from the cooked cauliflower with a clean cloth. Place the rice in a large bowl and discard the liquid.

Add the flax binder to the cauliflower with the flour, yeast, oregano, crushed chilies, dried basil, garlic powder and combine all the ingredients together well.

Transfer onto the baking sheet, spread evenly on the sheet making sure the crust is no more than 1/3" thick.

Bake the crust for approximately 20 minutes, then remove and carefully flip over and return to the oven and bake for a further 10 minutes. Take the crust out of the oven and allow it to sit for a few minutes.

Top the crust by overlapping the sliced tomatoes covering the base. Sprinkle with crushed chili flakes, vegan ricotta and mozzarella cheeses, Drizzle with basil oil bake for approximately 10 minutes.

Scatter the top with fresh ribbons of basil and more chili flakes to your liking. Cut your pizza and enjoy a guilt-free healthy pizza alternative.
