Soak 2 cups of long grain rice in 3 cups of water for 2-3 hours. Soak 1/2oz dried shiitake mushroom in 2cups of water for 2-3 hours. Soak 1oz dried scallop in 1 cup of Shaoxing wine for 2-3 hours.
