Stewed Green Tea Flavored Tofu

Fried tofu pieces coated with beaten egg and green tea powder then cooked in a savory sauce, this recipe is Chef John’s creation on the popular classic dish from Shandong.

Ingredients:
  • 1 tbsp. Dragon Well Green Tea( or any green tea)
  • 8 oz. Tofu
  • 1 cup Corn starch
  • 0.5 cup Matcha
  • 2 count Eggs
  • 0.5 cup Cooking oil
  • 0.6 cup Tiger Prawn Shrimp, diced
  • 1 tbsp. Ginger, minced
  • 1 tbsp. Green onion, thinly chopped
  • 1 tbsp. Oyster sauce
  • 1 tbsp. Cooking wine
  • 1 cup Green tea
  • 1 tsp. Sugar, to taste
  • 1 tsp. Salt, to taste
  • 1 tbsp. Red bell pepper, diced
  • 2 tbsp. Slurry (a mixture of equal parts of starch and water)
  • 1 tbsp. Chef John’s aroma oil, to taste(optional, or substitute with sesame oil)
  • 0.25 cup Fresh basil leaves

Prepare green tea. We use Dragon Well green tea and hot water at 80℃ /176℉.

Heat water to 80 °C / 176 °F, using part of the hot water to warm up the teacup first, then discard the water. Add tea leaves and 1.5 cups the hot water into the teacup, and let it steep for 5 minutes.

Vertically cut tofu into slices at about ¼ inch apart then cut into squares.

In a bowl, mix matcha and corn starch.

In a bowl, beat eggs until well mixed.

In a wok(or skillet) over high heat, heat the wok first and then add cold oil. Make sure the entire bottom of the wok/skillet is well oiled, then pour out excessive oil. (tip: Hot wok with cold is to prevent sticking when stir-frying tofu.) Coat tofu piece with matcha and starch mix, then dip into the egg liquid completely, shake off the excessive egg liquid. Place the coated tofu in the wok to fry.

Flip over when tofu is golden. Remove from heat when both sides are golden. Repeat until all tofu pieces are done.

Return wok to heat, add about 2 tablespoons cooking oil, shrimp, ginger, green onion, oyster sauce, and cooking wine, stir fry until mixed well,

Add 1 cup of green tea, and sugar and salt to taste.

Then add tofu and simmer for a few minutes. Add red pepper, and thicken with slurry until desired thickness.

Add Chef John’s aroma oil(optional or sesame oil) and basil leaves.

Remove from heat and serve hot.
