Slow Cooker Honey Garlic Chicken Thighs and Potatoes Recipe

I love a good slow cooker meal and this honey garlic chicken thighs and potatoes are slow-cooked to perfection. The chicken and potatoes are well seasoned and slow cooked in a flavor-packed honey garlic sauce. This recipe is so good and easy!

Ingredients:
  • 6 Large Bone-in thighs
  • 1 Large Onion, minced
  • 1 lb. Baby potatoes
  • 2 tsp. Oregano
  • Salt and pepper to taste ( i used 2 tsp salt and 1 tsp black pepper)
  • 2 tbsp. Olive oil
  • 2 tbsp. Lemon juice
  • 6 Cloves Garlic, minced
  • 1/2 cup Honey
  • 1/3 cup Sweet chili sauce
  • 3 tbsp. Soy sauce
  • 1 tbsp. Brown sugar
  • 1 tbsp. Dijon mustard
  • 1 tbsp. Corn starch mixed with 2 Tbsp water
Directions:

Add six large bone-in skin-on chicken thighs it's about two pounds of chicken.

Slice one large onion. Toss that right in.

Adding one pound of red baby potatoes you can also use gold potatoes and if they're bigger in sizes make sure you cut them.

Season with two teaspoons of oregano salt and pepper to taste. Drizzle 2 tablespoons of olive oil all over them then toss everything together make sure you mix very well.

Once everything is mixed in I'm just going to arrange them nicely and make sure the skin side of your chicken is facing up. Set the slow cooker aside.

Mix lemon juice in a bowl into that, I am adding 6 cloves of minced garlic, half cup of honey, sweet chili sauce soy sauce and brown sugar and last we're adding one tablespoon of dijon mustard. Mix everything together this sauce is so good it's the perfect combination of sweet and tart.

Take the slow cooker then pour the honey garlic sauce all over the chicken and potatoes. I'm going to place the lid on then we're going to cook this for four to six hours on high setting.

It's been about five hours of cooking and this part is completely optional but the sauce on the chicken is a little runny so in order to make it thick add one tablespoon of corn starch mixed with two tablespoons of water this will give the sauce a nice gravyish consistency. Mix that in very well then let this continue cooking.
